Honey Lemon Rack of Lamb

I'm a simple person love to collect any recipe that I would love to eat especially for any occasion in our family. Please try this simple recipe that will enjoy the whole family.


2 racks of lamb
2 cloves garlic, cut in slivers
1/4 tsp (1 ml) salt
1/2 cup (125 ml) honey
1/3 cup (80 ml) firmly packed brown sugar
1/2 tsp (2 ml) garlic powder
6 tbsp (90 ml) lemon juice
1 tsp  (5 ml) grated lemon zest
1 tbsp (15 ml) fresh mint leaves, chopped
1/2 cup (125 ml) pecans, finely chopped


  1. Preheat oven to 350 Fahrenheit.
  2. Cut  small slits all over the lamb and insert the garlic silvers.
  3. Salt the lamb
  4. Bake lamb in oven for 30 minutes, bone side down in shallow roasting pan.
  5. In small saucepan combine honey, brown sugar, garlic powder and lemon juice.
  6. Heat on medium, and stir until sugar is dissolved.
  7. Remove from heat and stir in lemon zest, mint and pecans.
  8. Spoon mixture over the lamb.
  9. Continue roasting for 30-456 minutes, occasionally basting with mixture.
  10. Using a meat thermometer cook until 160 Fahrenheit
